A flavor-packed, easy-to-make dish with tender chicken, spiced salsa, rice, beans, corn, and fresh toppings. Perfect for busy weekday meals or casual dinners.

2-2.5 lbs skinless boneless chicken breast
16 oz chunky salsa
1/3 cup BRIANNAS Cilantro Lime Dressing + more for drizzling
1/2 cup low sodium chicken broth
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp smoked paprika
4 cups cooked rice
2 cups frozen sweet corn
1 (16oz) can low sodium black beans (rinsed and drained)
3 small avocados (diced)
1/4 cup chopped cilantro
1 lime (cut into wedges)

Instructions

Season chicken with chili powder, cumin, and smoked paprika
Add chicken, salsa, dressing, and broth to the slow cooker
Cook on low for 4 hours or high for 2 hours until chicken is tender
Flake chicken into the slow cooker and stir to combine
Place rice in a bowl, then top with chicken mixture, black beans, corn, avocado, cilantro, and lime wedges

Notes

Add tomatoes or bell peppers for extra flavor
Use cooked frozen corn to reduce prep time
Substitute quinoa or cauliflower rice for lower carbs
