Keto Crispy Reuben Roll-Ups are a low-carb twist on the classic sandwich. Made with baked Swiss cheese, corned beef, sauerkraut, and sugar-free dressing, these roll-ups are crispy, cheesy, and perfect for keto meals.
2 cups shredded Swiss cheese
8 slices corned beef
1/2 cup sauerkraut, well drained
1/4 cup sugar-free Thousand Island dressing
1/2 teaspoon caraway seeds (optional)
Fresh parsley, chopped (for garnish)
1. Preheat oven to 400°F and line baking sheet with parchment.
2. Divide shredded Swiss into 4 thin circles on baking sheet.
3. Bake 5–7 minutes until melted and golden.
4. Cool 1–2 minutes until pliable.
5. Add corned beef, sauerkraut, and dressing to center.
6. Roll tightly while cheese is warm.
7. Optional: Return to oven 2–3 minutes for extra crisp.
8. Cool slightly and serve.
Do not overfill.
Drain sauerkraut thoroughly.
