Ingredients

6 large eggs, beaten
3 cups hash browns (frozen or shredded)
4 slices sliced cheese
1 cup halal meat protein (diced chicken or turkey sausage)
4 tablespoons butter
1/2 cup diced red bell pepper
1/2 cup diced onion
Seasoning salt to taste
Jalapeño, finely chopped (optional)

Instructions

Preheat oven to 400°F (200°C)
Melt 1 tbsp butter in a nonstick skillet over medium heat
Sauté onion and red bell pepper for 3 minutes
Add halal meat and cook until browned
Push meat and veggies to one side of pan, add beaten eggs to the empty side
Sprinkle cheese slices and season with salt
Ladle in 1 tbsp melted butter
Gently fold in hash browns
Cook until eggs set

Notes

Swap halal meat for shrimp or tofu
Use olive oil spray instead of butter for reduced fat
