Ingredients

Scale

2 large sweet potatoes, peeled and diced into 1/2-inch cubes
1 pound lean ground beef (85-90% lean)
1 cup uncooked white rice
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1/2 teaspoon cumin
Optional toppings: cherry tomatoes, sliced avocado, shredded cheese, black beans, cilantro, and Greek yogurt

Instructions

Preheat your oven to 400°F (200°C).
Toss diced sweet potatoes with 1 tablespoon olive oil, smoked paprika, salt, and pepper on a baking sheet.
Roast sweet potatoes for 25-30 minutes until tender and golden brown.
While potatoes roast, cook the rice according to package directions.
Heat a skillet over medium-high heat and add the ground beef.
Season the beef with garlic powder, onion powder, chili powder, and cumin while browning.
Cook until the beef is fully browned and cooked through, breaking it into crumbles.
Assemble the bowls by layering the cooked rice, roasted sweet potatoes, and seasoned ground beef.
Add your desired toppings like avocado, tomatoes, or Greek yogurt before serving.

Notes

Store the components in separate airtight containers in the refrigerator for up to 4 days for easy meal prep. For extra fiber, swap white rice for brown rice or quinoa. Ground turkey or chicken works well as a lean alternative to beef.
