4 cups sweet potatoes, peeled and diced
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon smoked paprika

1 cup frozen corn kernels, thawed
½ cup red onion, finely chopped
2 cloves garlic, minced
1 tablespoon lime juice

8 small whole wheat tortillas
2 cups enchilada sauce
1½ cups shredded cheese (Monterey Jack or cheddar)

Preheat the oven to 400°F (200°C).
Toss the diced sweet potatoes with olive oil, cumin, smoked paprika, salt, and pepper.
