Ingredients

Scale

1 lb shrimp, peeled and deveined
1 cup fresh pineapple chunks
1/3 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon honey
2 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon olive oil
1/2 teaspoon red pepper flakes
2 green onions, sliced
1 tablespoon sesame seeds

Instructions

In a small bowl, whisk together the sweet chili sauce, soy sauce, honey, minced garlic, and grated ginger.
Heat the olive oil in a large skillet or wok over medium-high heat.
Add the shrimp to the skillet and cook for 2-3 minutes until pink and opaque.
Add the pineapple chunks and red pepper flakes, cooking for another 2 minutes until the pineapple begins to caramelize.
Pour the sauce mixture over the shrimp and pineapple.
Simmer for 1-2 minutes until the sauce thickens and coats everything evenly.
Remove from heat and garnish with sliced green onions and sesame seeds before serving.

Notes

Frozen shrimp works well as long as you thaw and pat it completely dry. Use tamari instead of soy sauce if you need a gluten-free option. Add a splash of rice vinegar if you prefer a sharper tangy profile.
