1 lb red potatoes, diced into small cubes
1-2 cups shredded cheddar or Colby Jack cheese
1 cup finely chopped lettuce or mixed greens
1 small yellow onion, finely diced
1/2 cup mayonnaise
1/4 cup ketchup
1 tablespoon yellow or Dijon mustard
1/2 teaspoon Cajun seasoning
Olive oil for cooking
Salt and black pepper to taste

Instructions

Place diced potatoes in a bowl with olive oil, salt, and pepper, then air fry at 400°F until golden and crispy, about 20 minutes.
While potatoes cook, whisk together mayonnaise, ketchup, mustard, and Cajun seasoning to create the zesty sauce.
Heat a large skillet over medium-high heat with a little oil.
Add the diced onions to the skillet and sauté until softened; push to the side or remove.
