For the Ribs

  • 3 pounds beef back ribs
  • 1/2 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1/2 cup water
  • 1 cup BBQ sauce (or to taste)

Dry Rub

  • 1 teaspoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Instructions

Step 1: Prepare the Ribs

Pat the beef ribs dry with paper towels. If needed, trim excess fat for better texture and flavor.

Step 2: Make the Dry Rub

In a small bowl, combine brown sugar, paprika, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well.

Step 3: Season the Ribs

Rub the seasoning mixture generously over both sides of the ribs, pressing it into the meat to ensure full coverage.

Step 4: Arrange in Slow Cooker

Place the ribs inside the slow cooker, curling them along the sides if needed. Add sliced onions, garlic, and water in the center.

Step 5: Slow Cook

Cover and cook on LOW for 6–7 hours, until the ribs are tender but still hold their shape. Avoid overcooking to prevent them from falling apart too much.

Step 6: Transfer Carefully

Remove the ribs gently from the slow cooker and place them on a lined baking sheet. Use a spatula if needed to keep them intact.

Step 7: Add BBQ Sauce

Brush a generous layer of BBQ sauce over the ribs, coating all sides evenly.

Step 8: Broil for Finish

Place under the broiler for 2–4 minutes until the sauce caramelizes and becomes slightly sticky. Keep an eye on them to avoid burning.

Step 9: Serve

Serve hot with extra BBQ sauce on the side and your favorite sides.
