Description
Sheet pan honey mustard salmon with roasted potatoes and broccoli for an easy one pan dinner.
Ingredients
5 salmon fillets
1/4 cup honey
1/4 cup mustard
4 garlic cloves
1 tbsp apple cider vinegar
2 tsp lemon zest
Salt and spices
1 lb baby potatoes
3 cups broccoli
Olive oil
Instructions
1. Preheat oven to 400°F.
2. Whisk marinade ingredients.
3. Marinate salmon 30 minutes.
4. Roast potatoes 20 minutes.
5. Add broccoli and salmon.
6. Bake 12-16 minutes.
7. Rest and garnish.
Notes
Do not marinate longer than 40 minutes.
Cook until salmon reaches 125-130°F for best texture.
