1 1/2 pounds ground chicken
1 bunch green onions, white and light green parts thinly sliced
1/4 cup chopped fresh parsley
1 large egg
2 tablespoons coconut flour
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1/2 teaspoon paprika
2 teaspoons kosher salt
1/2 teaspoon black pepper
3 tablespoons olive oil
1/3 cup mayonnaise
1 tablespoon hot sauce

Instructions

In a large mixing bowl, combine the ground chicken, sliced green onions, parsley, egg, coconut flour, garlic powder, onion powder, paprika, salt, and black pepper.
Mix the ingredients gently until well combined, being careful not to overwork the meat.
Form the mixture into 8 uniform patties.
Heat the olive oil in a large skillet over medium heat.
Working in batches to avoid overcrowding, cook the patties for about 4-5 minutes per side until golden brown and cooked through to an internal temperature of 165°F.
In a small bowl, whisk together the mayonnaise and hot sauce to make the aioli.
Serve the hot patties with the spicy aioli and reserved green onions for garnish.

Notes

Do not substitute coconut flour with other flours as its absorption rate is unique to this recipe. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet to maintain texture.
