Ingredients

Scale

1 lb ground beef
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon ginger, minced
2 cups cooked rice
1 cup broccoli florets
1/2 cup carrots, julienned
2 green onions, sliced
1/4 cup mayonnaise
1 tablespoon sriracha
1 teaspoon lime juice

Instructions

In a small bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, and ginger until well combined.
In a separate small bowl, mix the mayonnaise, sriracha, and lime juice to create the topping.
Heat a large skillet over medium-high heat and cook the ground beef until browned, breaking it up with a spoon.
Add the broccoli and carrots to the skillet and cook until slightly tender but still crisp.
Pour the soy sauce mixture over the beef and vegetables, stirring to coat and simmering for 2-3 minutes until the sauce thickens slightly.
Divide the cooked rice into four bowls.
Top each bowl with the beef and vegetable mixture.
Garnish with sliced green onions and drizzle with the spicy mayo before serving.

Notes

You can substitute ground beef with ground turkey or chicken for a leaner option. Feel free to add extra vegetables like bell peppers or snap peas to customize your bowls. Store leftovers in an airtight container in the refrigerator for up to 3 days.
