A bold and flavorful twist on a classic burger featuring a creamy poblano popper mixture tucked inside juicy beef patties. Balanced flavors and easy preparation make this a go-to family-friendly dinner.

4 poblano peppers
16 oz cream cheese, softened
1.5 cups shredded cheddar cheese
1/4 cup diced chives
1 Tbsp garlic powder
1 tsp salt
1 tsp pepper
6 pre-formed beef burger patties (or 2 lbs ground beef, divided into 6 patties)
Burger seasoning of choice
6 brioche buns

Instructions

Preheat oven to 375°F (190°C). Roast poblano peppers until skin is charred and blistered. Remove from oven and place in a bowl; cover with a lid or plastic wrap for 5 minutes.
Peel off skin, remove stems and seeds, then dice the peppers.
In a bowl, mix softened cream cheese, shredded cheddar cheese, diced chives, garlic powder, salt, and pepper until well combined.
Divide the cream cheese mixture into 6 equal portions. Stuff each beef patty with a portion of the mixture, shaping the patty around it.
Place the stuffed patties on a baking sheet and bake for 12–15 minutes, or until the patties are cooked through and the cheese is melted and slightly golden.
In the last 2 minutes of baking, place the brioche buns cut-side up on the baking sheet to toast.
Assemble burgers by placing a warmed patty inside each toasted brioche bun. Serve warm.

Notes

Poblano peppers can be substituted with jalapeños for a spicier flavor. For a lighter texture, substitute cream cheese with a mix of ricotta and sour cream. Use ground turkey or chicken as a leaner protein option if preferred. Ensure your buns are toasted to add a nice crunch to the burger.
