Parmesan crusted cod is a crispy baked fish recipe made with panko breadcrumbs, lemon, and fresh parmesan. Ready in just 15 minutes.

Ingredients

1 lb cod filets

2 tablespoons softened butter

1 tablespoon fresh lemon juice

1/3 cup panko breadcrumbs

1/3 cup grated parmesan cheese

1/3 cup fresh parsley

2 tablespoons Italian seasoning

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon sea salt

1/2 teaspoon black pepper

2 teaspoons olive oil

Instructions

1. Preheat oven to 400°F and line a sheet pan with parchment paper

2. Mix butter and lemon juice in a small bowl

3. Coat cod fillets with the butter mixture

4. Combine breadcrumbs, parmesan, herbs and seasonings

5. Press breadcrumb mixture onto cod fillets

6. Bake for 10 to 12 minutes until cod flakes easily

7. Serve immediately with parsley and lemon wedges

Notes

Store leftovers in refrigerator up to 3 days

Reheat in oven at 350°F for 7 to 10 minutes

Air fryer reheating takes about 2 to 3 minutes
