3 medium golden potatoes, peeled and diced
1 onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 cup beef broth
1 cup shredded cheddar cheese
1 tbsp olive oil
Fresh parsley, for garnish
Heat the olive oil in a large skillet over medium-high heat.
Add diced potatoes and cook for 8 to 10 minutes until lightly browned and beginning to soften.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
Stir in the onion, bell pepper, and garlic, cooking until the vegetables are tender.
Add the paprika, onion powder, garlic powder, salt, and black pepper.
Pour in the beef broth, cover, and simmer for 5 to 7 minutes until potatoes are fork-tender.
Remove the lid, stir, and sprinkle the cheddar cheese over the top.
Cover momentarily until the cheese is melted and bubbling.
Garnish with fresh parsley before serving.
You can substitute ground turkey for ground beef if preferred. Feel free to add other seasonal vegetables like broccoli or carrots for extra nutrition. Store leftovers in an airtight container for up to 3 days.
