1 tbsp. olive oil
1 small red onion, diced
1 medium jalapeno, seeded and minced
3 cloves garlic, minced
2 (12 oz.) skinless, boneless chicken breasts
1 (12 oz.) package fire-roasted frozen corn
1 (4 oz.) can diced green chiles
1 tbsp. Tajin seasoning
2 tsps. ground cumin
2 tsps. chile powder
1/2 tsp table salt
1/4 tsp finely ground black pepper
4 cups (32 oz.) chicken stock
2 cups sour cream (full-fat)
1/2 cup shredded Monterey Jack cheese
Juice of one lime
1/4 cup chopped fresh cilantro

Instructions

Heat olive oil in a large pot over medium heat.
Add the diced red onion and minced jalapeño, sautéing until softened.
Stir in the garlic and cook until fragrant.
Add the chicken breasts to the pot and sear on both sides, then cook through before removing to shred.
Add the fire-roasted corn and diced green chiles to the pot.
Stir in the Tajin, cumin, chile powder, salt, and black pepper.
Pour in the chicken stock and bring the mixture to a simmer.
Return the shredded chicken to the pot.
Reduce heat to low and stir in the sour cream and Monterey Jack cheese until melted and creamy.
Remove from heat, stir in the lime juice and fresh cilantro, and serve immediately.

Notes

Adjust the heat by removing more or fewer seeds from the jalapeño. For a lighter version, you can substitute Greek yogurt for the sour cream, though the texture will be slightly less rich.
