1 lb chicken breast cut into 1 inch chunks
2.5 tbsp olive oil
2.5 tbsp lemon juice
2 garlic cloves minced
2 tsp oregano
1/2 tsp paprika
1 tsp salt
1/2 tsp pepper
1/4 tsp red pepper flakes
1.25 cups cucumbers diced
1 cup tomatoes diced
1 cup bell pepper diced
1/4 cup red onion finely chopped
2 tbsp parsley chopped
3/4 cup crumbled feta
1 tbsp lemon juice
Salt and pepper to taste
8 pitas
1/2 cup tzatziki sauce
1. Whisk olive oil lemon juice garlic oregano paprika salt pepper and red pepper flakes in a bowl
2. Add chicken chunks and toss to coat evenly then marinate for 15 to 45 minutes
3. In another bowl combine cucumbers tomatoes bell pepper red onion parsley and feta
4. Season salsa with lemon juice salt and pepper and mix gently
5. Heat a skillet over medium high heat and cook marinated chicken pieces for 3 to 5 minutes per side
6. Cook until chicken reaches internal temperature of 165°F
7. Warm pitas in skillet oven or over flame
8. Fill each pita with cooked chicken Mediterranean salsa and drizzle with tzatziki
9. Serve immediately
Let chicken marinate at least 20 minutes for deeper flavor
