Marry Me Chicken is a creamy one-pan chicken recipe with sun-dried tomatoes, spinach, garlic, and Parmesan cheese in a rich sauce.

Ingredients

1 1/2 pounds boneless skinless chicken breasts sliced lengthwise

1 tsp kosher salt

1/2 tsp black pepper

2 tbsp butter

1 tbsp olive oil

1 large shallot minced

3 garlic cloves minced

1/2 tsp Italian seasoning

1/4 tsp red pepper flakes

2 tsp tomato paste

1 cup chicken stock

1 cup heavy cream

1/2 cup sun dried tomatoes chopped

1/4 cup Parmesan cheese

3 cups baby spinach

1/4 cup fresh basil

Instructions

1. Season chicken with salt and pepper.

2. Sear chicken in butter and olive oil until golden then remove.

3. Cook shallot, garlic, seasoning and red pepper flakes.

4. Add tomato paste then chicken stock to deglaze pan.

5. Stir in heavy cream, sun dried tomatoes and parmesan and simmer.

6. Add spinach and return chicken to skillet.

7. Cook until chicken reaches 165°F and garnish with basil.

Notes

Slice chicken breasts thinner for faster cooking.

Serve with pasta, rice or crusty bread.
