Ingredients

Scale

1.5 lbs Boneless Skinless Chicken Breasts (approx. 3-4 breasts)
2 tbsp Extra Virgin Olive Oil
1 tsp Smoked Paprika
1 tsp Garlic Powder
0.5 tsp Dried Oregano
1 tsp Kosher Salt
0.5 tsp Cracked Black Pepper
1 tbsp Fresh Parsley, chopped for garnish

Instructions

Preheat your oven to 425°F (220°C).
Pat the chicken breasts dry with paper towels to ensure a good sear.
In a small bowl, whisk together the smoked paprika, garlic powder, dried oregano, salt, and pepper.
Rub the chicken breasts all over with the olive oil, then coat evenly with the spice blend.
Place the chicken on a parchment-lined baking sheet.
Bake for 18-22 minutes, or until the internal temperature reaches 165°F (74°C).
Remove from the oven, let rest for 5 minutes before slicing, and garnish with fresh parsley.

Notes

Letting the chicken rest is crucial for retaining juices. For a spicier version, add a pinch of red pepper flakes to the rub. If using chicken tenderloins, reduce bake time to 12-15 minutes.
