1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)
¼ cup honey
2-3 tablespoons Sriracha
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
2 cloves garlic (minced)
1 teaspoon ground ginger
Salt, to taste
Pepper, to taste
2 tablespoons olive oil
½ cup Greek yogurt
2 tablespoons mayonnaise
1 whole lime (juiced and zested)
1 clove garlic (minced)
2 cups cooked rice (white or brown)
1 cup steamed broccoli
Sliced green onions (for garnish)
Sesame seeds (for garnish)

Instructions

1. In a bowl, combine chicken thighs with honey, Sriracha, soy sauce, apple cider vinegar, garlic (2 cloves), ginger, salt, pepper, and olive oil. Marinate for 10-15 minutes.
2. Heat a large skillet over medium heat. Add chicken and sauté until fully cooked (7-10 minutes), stirring occasionally.
3. For the creamy lime sauce, mix Greek yogurt, mayonnaise, lime juice, lime zest, and minced garlic in a small bowl (reserve extra lime for garnish).
4. Prepare rice (if not already cooked) and steam broccoli until tender.
5. Arrange rice in bowls, top with chicken, broccoli, and drizzle the lime sauce. Garnish with green onions, sesame seeds, and extra lime wedges.
