A classic, hearty comfort meal perfect for busy weeknights. This one-pan hobo casserole combines savory ground beef, tender sliced potatoes, and aromatic onions, all topped with a bubbling golden crust of cheddar and parmesan cheese. It is a reliable family-favorite that is both affordable and incredibly easy to prepare.
1 lb ground beef
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4-5 medium potatoes, thinly sliced
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
1/2 teaspoon paprika
Salt and pepper to taste
1/2 cup beef broth
1/4 cup milk
Fresh parsley for garnish
Preheat your oven to 375°F (190°C).
Heat olive oil in a skillet and brown the ground beef with the onion and minced garlic until the beef is fully cooked.
Drain excess fat if needed and season with Italian seasoning, paprika, salt, and pepper.
Grease a 9×13 inch baking dish.
Layer half of the sliced potatoes into the baking dish, then top with the cooked ground beef mixture.
Layer the remaining potato slices over the beef.
Whisk together the beef broth and milk, then pour over the casserole.
Cover the dish tightly with foil and bake for 35 minutes.
Remove the foil, sprinkle the cheddar and Parmesan cheese over the top, and bake for an additional 15 minutes or until the potatoes are tender and the cheese is bubbly and golden.
Garnish with fresh parsley before serving.
Ensure potatoes are sliced thinly and uniformly for even cooking. If you prefer extra creaminess, you can substitute the milk with heavy cream. Store leftovers in an airtight container for up to 3 days.
