High Protein Chicken Zucchini Bake is a creamy and healthy casserole made with tender chicken breast, zucchini, Greek yogurt, eggs, and melted cheese.
2 chicken breasts cut into bite sized pieces
2 medium zucchinis thinly sliced
1 cup Greek yogurt
2 eggs
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 small onion diced
2 cloves garlic minced
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon smoked paprika
Salt and black pepper to taste
1. Preheat oven to 375°F
2. Season chicken pieces with oregano paprika salt and pepper
3. Heat olive oil in skillet and sear chicken until lightly golden then set aside
4. In same skillet cook diced onion until soft then add garlic and cook briefly
5. Whisk Greek yogurt and eggs in a bowl until smooth and season lightly
6. Layer zucchini slices in baking dish followed by chicken and onion mixture
7. Pour yogurt mixture over layers and top with mozzarella and Parmesan
8. Repeat layers once more
9. Cover with foil and bake for 20 minutes
10. Remove foil and bake another 15 minutes until cheese is golden
11. Let casserole rest for 5 minutes before serving
Slice zucchini thinly for best texture
