Ingredients

Scale

1/4 cup olive oil
1 medium onion, diced
1 large leek, white and light green parts only, sliced
3 large carrots, thinly sliced
3 stalks celery, thinly sliced
1 teaspoon kosher salt
3 cloves garlic, chopped
1 teaspoon turmeric
1 teaspoon poultry seasoning
6 cups chicken broth
1 13.5 ounce can coconut milk
1 1/4 pounds boneless skinless chicken breasts or thighs
1 10 ounce bag frozen peas (optional)
1/4 cup chopped fresh parsley
1 teaspoon kosher salt, or to taste
1/2 teaspoon black pepper

Instructions

Step 1: Sauté the Aromatics

Heat your olive oil over medium heat in a large soup pot. Add the onions, leeks, carrots, celery, and 1 teaspoon of kosher salt. Sauté, stirring occasionally, until the leeks are soft and starting to caramelize, which takes about 14-16 minutes.

Step 2: Add Spices

Add the chopped garlic, turmeric, and poultry seasoning to the pot. Sauté for another 2-3 minutes, stirring frequently, until the spices and garlic are fragrant and well-combined with the vegetables.

Step 3: Simmer the Chicken

Add the broth and raw chicken to the pot, scraping up any delicious browned bits from the bottom. Bring the mixture to a simmer. Keep the chicken submerged beneath the broth and partially cover the pot. Simmer on low heat until the chicken is cooked through and the vegetables are tender, about 15-20 minutes.

Step 4: Shred and Finish

Remove the lid and take the chicken out to a cutting board. Shred it into bite-sized pieces using two forks. Return the chicken to the pot along with the frozen peas and fresh parsley. Bring to a slow simmer just until the peas are tender and bright green.

Step 5: Season and Serve

Taste the soup and add salt and pepper as needed. Serve hot, garnished with extra fresh parsley for a burst of color.

Pro Tips

  • Do not rush the sautéing phase; caramelizing the leeks creates the primary flavor base.
  • For extra nutrition, you can add diced sweet potatoes or kale in the final minutes.
  • Always shred your chicken while it is warm so it absorbs the broth more easily.
  • Use a high-quality chicken broth to ensure a rich base for your Healthy Chicken Soup.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove. If the soup thickens too much upon chilling, add a splash of broth before reheating.
