3 cups shredded chicken (rotisserie or cooked chicken breast)
4 cups cauliflower rice (store-bought or homemade)
8 oz (1 cup) cream cheese (softened) or Greek yogurt
1 cup shredded cheddar cheese (divided) or mixed cheeses
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
½ tsp salt
½ tsp black pepper
1 tbsp olive oil
1 cup chopped spinach, broccoli, or mushrooms (optional)
Sauté cauliflower rice in 1 tbsp olive oil for 5-7 minutes
In a bowl, mix chicken, cream cheese/yogurt, garlic powder, onion powder, paprika, salt, and pepper
Combine with sautéed cauliflower rice
Spread into a casserole dish, top with ¾ cup cheddar
Bake at 375°F (190°C) for 25 minutes
Add remaining cheese on top in the last 5 minutes
Let rest 5-10 minutes before serving
Stir in optional veggies if using
Use skinless chicken for lower fat
Substitute coconut oil for olive oil
Add garlic powder to plain Greek yogurt if using non-dairy
