A simple, flavor-packed recipe combining tender grilled sausage with sheet-pan vegetables in foil for an easy, balanced meal. Perfect for busy days or relaxed dinners, this American favorite is delicious and family-friendly.

1 package (12–14 oz) smoked kielbasa or halal sausage, sliced into ½-inch rounds
1 medium zucchini, sliced and halved
1 medium yellow summer squash, sliced
1 medium red bell pepper, chopped into 1-inch pieces
1 medium red onion, chopped into large chunks
2 tbsp olive oil (or vegetable oil)
1 tbsp Italian seasoning (or a mix of dried oregano and thyme)
1 tsp garlic powder
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (optional, for garnish)

Instructions

Preheat grill or oven to 400°F (200°C).
Arrange sausage, zucchini, squash, red bell pepper, and red onion on a large sheet of heavy-duty aluminum foil.
Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and pepper.
Fold the foil to enclose the ingredients, ensuring it’s sealed to trap moisture.
Grill for 20–25 minutes (or bake on a baking sheet for 25 minutes) until the vegetables are tender and the sausage is heated through.
Open the foil packet carefully, letting the steam escape, then serve. Garnish with fresh parsley, if desired.

Notes

Use chicken, shrimp, or tofu as a meat-free or halal alternative to sausage.
For a smoky flavor without smoked sausage, use a halal sausage or add a pinch of smoked paprika to the seasoning mix.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
