4 boneless skinless chicken breasts
3 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme leaves
2 tablespoons butter
1 cup chicken broth
2 pounds russet potatoes
1/2 cup heavy cream
2 tablespoons brown sugar
1 tablespoon balsamic vinegar

Instructions

Peel and quarter the potatoes, boil in salted water until tender, then drain and mash with heavy cream and a knob of butter.
Heat olive oil in a large skillet and sear the chicken breasts over medium-high heat until golden brown on both sides and cooked through.
Add garlic, thyme, and 1 tablespoon of butter to the skillet, basting the chicken for 1-2 minutes until fragrant.
Remove the chicken from the skillet and set aside.
In the same skillet, add chicken broth, brown sugar, and balsamic vinegar.
Simmer the sauce until it reduces into a thick, sticky glaze.
Stir in the remaining tablespoon of butter and fresh parsley.
