1/4 cup ghee or butter, divided
1 tablespoon olive oil
1 lb Yukon Gold potatoes, cut into 1/2 inch cubes
3 garlic cloves, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon sea salt, plus more to taste
1/4 teaspoon ground black pepper, plus more to taste
1 1/4 lb sirloin steak, cut into 1/2 inch cubes
Heat 2 tablespoons of ghee or butter and the olive oil in a large skillet over medium-high heat.
Add the cubed potatoes to the skillet in a single layer and cook undisturbed for 5-6 minutes until golden brown.
Flip the potatoes and continue cooking for another 5-6 minutes or until tender and crispy throughout.
Remove the potatoes from the skillet and set aside.
In the same skillet, add the remaining ghee or butter and sear the steak cubes for 2-3 minutes per side until browned to your preferred level of doneness.
Stir in the minced garlic, dried thyme, dried oregano, salt, and pepper, cooking for 1 minute until fragrant.
Return the potatoes to the pan and toss everything together to coat in the garlic butter sauce.
Serve hot immediately.
Ensure you dry the steak cubes with a paper towel before searing to get a better crust. You can substitute Yukon Gold potatoes with yellow, red, or fingerling potatoes. Keep it as a one-pan meal for minimal cleanup.
