1 pre-baked 9-inch pie crust
1 1/2 pounds fresh strawberries, hulled
3/4 cup granulated sugar
2 tablespoons cornstarch
1/2 cup water
1 tablespoon lemon juice
1 teaspoon vanilla extract (optional)
1 cup heavy whipping cream
2 tablespoons powdered sugar
1. Bake and cool pie crust completely.
2. Slice strawberries, reserving 1 cup for glaze.
3. Cook reserved strawberries with sugar, water, and lemon juice.
4. Add cornstarch slurry and cook until thick and glossy.
5. Arrange fresh strawberries in crust.
6. Pour glaze over berries evenly.
7. Refrigerate 3–4 hours until set.
8. Top with whipped cream before serving.
