3 tablespoons olive oil, divided
1 medium onion, diced
1 tablespoon garlic, minced
1 cup baby spinach, chopped
1 lb. ground chicken
1/2 cup breadcrumbs
1/4 cup Greek yogurt
2 tablespoons fresh dill, finely chopped
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons fresh parsley, finely chopped

Instructions

Heat 1 tablespoon olive oil in a skillet over medium heat
Add diced onion and sauté for 2-3 minutes until softened
Stir in minced garlic and chopped baby spinach; cook for 5 minutes until wilted
In a bowl, combine ground chicken, breadcrumbs, Greek yogurt, fresh dill, lemon juice, dried oregano, paprika, ground cumin, salt, and black pepper
Form the mixture into 8-10 patties
Heat remaining 2 tablespoons olive oil in a large skillet over medium-high heat
Cook the patties for 4-5 minutes per side until golden brown and cooked through
Garnish with fresh parsley before serving

Notes

Use plain or seasoned breadcrumbs for texture variation
Freeze uncooked patties for future use
Add 1/4 tsp black pepper as a garnish for heat
