2 lbs boneless chicken thighs
12 corn tortillas
3 ripe avocados
1 white onion
1 bunch fresh cilantro
2 limes
4 oz queso fresco cheese
2 tsp chili powder
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
1-2 tbsp cooking oil
1 tsp extra-virgin olive oil (optional, for warmth)

Instructions

Preheat oven to 375°F (190°C)
Season chicken thighs with chili powder, cumin, paprika, salt, and pepper
Heat oil in a skillet over medium-high heat; cook thighs until no longer pink (about 6-8 minutes per side)
Meanwhile, finely dice onion and cilantro; mix with lime juice (1 lime) to make pico-style topping
Mash avocados with remaining lime juice, salt, and cilantro to make guacamole
Warm tortillas in a dry skillet or microwave
Assemble tacos with chicken, guacamole, pico topping, and crumbled queso fresco
