Description

This easy Margarita Tres Leches Cake is a bright, family-friendly twist on a classic dessert. Bursting with citrus and topped with whipped cream, it’s perfect for any occasion.


Ingredients

5 large eggs, separated

¾ cup granulated sugar

1 tsp lime extract (or vanilla)

1 cup all-purpose flour

1½ tsp baking powder

¼ tsp salt

1 can (14 oz) sweetened condensed milk

1 can (12 oz) evaporated milk

½ cup whole milk

2 tbsp fresh lime juice

1 tbsp orange juice

Zest of 12 limes

2 cups heavy whipping cream

¼ cup powdered sugar

1 tbsp lime juice

Zest of 1 lime (for garnish)


Instructions

1. Preheat oven to 350°F. Grease a 9×13 pan.

2. Beat egg whites to soft peaks, add sugar, then yolks and extract.

3. Fold in sifted dry ingredients.

4. Bake 25–30 minutes. Let cool.

5. Poke holes all over cake.

6. Whisk milk soak ingredients and pour over cake.

7. Chill 4+ hours or overnight.

8. Whip cream with sugar and lime juice. Spread over cake. Garnish and serve.


Notes

Store covered in refrigerator for up to 5 days.

Best served chilled with fresh lime zest.
