Ingredients

Scale

2 tablespoons olive oil (divided)
0.5 lb ground turkey
1.5 tablespoons taco seasoning
Salt and pepper to taste
3–4 large eggs
0.25 cup cottage cheese (2%-4% fat)
1 tablespoon butter
1 cup shredded potatoes
Optional toppings: fresh chives, avocado, shredded cheese, salsa

Instructions

Step 1: Cook the Ground Turkey

Heat a skillet to medium heat with 0.5 tablespoons of olive oil. Once the pan is hot, add the ground turkey. Break the meat into small pieces using a wooden spoon or spatula. Season with the taco seasoning and continue to cook until the turkey is no longer pink. Taste and adjust with salt and pepper as needed, then remove from the pan.

Step 2: Prepare the Creamy Eggs

In a medium bowl, crack your eggs and add the cottage cheese with a pinch of salt and pepper. Whisk the mixture until the ingredients are fully combined. Melt one pat of butter in a skillet over medium-low heat. Add the egg mixture and gently fold until they reach a firm, fluffy consistency. Set aside.

Step 3: Crisp the Potatoes

Wipe out the skillet used for the meat and add the remaining olive oil over medium heat. Place the shredded potatoes on a clean kitchen towel and squeeze out all excess moisture. Add them to the hot pan, season with salt and pepper, and press down. Let them cook for 4-5 minutes, then break them up and flip until golden brown.

Step 4: Build Your Bowl

Divide the fluffy eggs, seasoned ground turkey, and golden potatoes between serving bowls. Add your favorite optional toppings and serve immediately while hot.

Pro Tips

  • Do not skip squeezing the potatoes; drier potatoes result in a much crispier finish.
  • Cook on medium-low for the eggs to ensure they remain soft rather than rubbery.
  • If meal prepping, store components separately so you can reheat only the portions you need.
  • Add fresh herbs just before serving to keep the flavors bright and vibrant.

Notes

Ground turkey can be swapped for ground chicken or ground beef. Use egg whites for a lighter option. Shredded sweet potatoes are a great nutritious alternative to regular potatoes. Store leftovers in an airtight container for up to 3 days.
