These Easy Ham and Cheese Croissant Sandwiches offer bold flavor with minimal effort. Perfect for a family-friendly meal, they combine sweet, tangy, and savory elements in a buttery croissant for a satisfying bite every time.

⅓ cup unsalted butter, at room temperature
2 tablespoons Dijon mustard
2 green onions, thinly sliced
1 tablespoon honey
½ tsp sea salt
¼ tsp black pepper
12 croissants, halved horizontally
1 pound thinly sliced smoked deli ham
12 slices Swiss cheese, diagonally sliced
1 large egg white
2 teaspoons poppy seeds

Instructions

Preheat oven to 350°F (175°C)
In a small bowl, mix unsalted butter with Dijon mustard until well combined.
Stir in thinly sliced green onions and honey.
Add sea salt and black pepper to taste.
Brush the mixture evenly onto the cut sides of the croissant halves.
Place the bottom halves of the croissants on a baking sheet.
Layer 1 slice of ham and 1 slice of Swiss cheese over each bottom half.
Top with the remaining croissant halves.
In a small bowl, whisk the egg white.
Brush the tops of the croissants with the egg white and sprinkle with poppy seeds.
Bake for 18 minutes, or until the tops are golden brown and the cheese is melted.
Let cool slightly before serving.

Notes

Dijon mustard can be substituted with yellow mustard if needed. For the cheese, you may use Gruyère or a mild cheddar instead of Swiss. Ensure the ham is fully cooked and cold if pre-cooked deli ham is unavailable. These sandwiches are best eaten fresh but can be stored in an airtight container for up to 1 day.
