Ingredients

4 boneless chicken breasts (or 8 chicken thighs)

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon dried oregano

1/4 teaspoon cayenne pepper

Brine:

4 cups warm water

1/4 cup kosher salt

2 tablespoons brown sugar

2 cloves garlic, smashed

Instructions

1. Dissolve kosher salt and brown sugar in warm water. Add smashed garlic and submerge chicken. Brine for 30 minutes to 2 hours.

2. Remove chicken from brine and pat completely dry.

3. Mix salt, pepper, garlic powder, paprika, oregano, and cayenne in a small bowl.

4. Rub chicken with olive oil and coat evenly with spice mixture.

5. Preheat grill to medium-high heat (375-400°F). Clean and oil grates.

6. Grill chicken for 6-7 minutes without moving. Flip and cook 5-6 more minutes until internal temperature reaches 165°F.

7. Let rest for 5 minutes before slicing and serving.
