A comforting casserole of tender shredded chicken, fresh zucchini, and creamy cheesy layers. This simple, flavorful dish is perfect for weeknights, combining protein-rich chicken with healthy vegetables and a rich cheesy sauce in under 45 minutes.

Ingredients

1.5 lbs cooked chicken (rotisserie or shredded),
3 medium zucchinis (sliced)
1 cup cherry tomatoes (halved)
1 cup shredded mozzarella cheese
1/2 cup cream cheese (softened)
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper (to taste)
1 tbsp olive oil
4 oz cream cheese (for topping),
1/4 cup grated Parmesan cheese (optional)
Fresh basil (optional garnish)

Instructions

Preheat oven to 375°F (190°C)
Heat olive oil in a skillet, sauté zucchini and garlic powder 5 minutes
Mix cooked chicken with 1/2 cup cream cheese, Italian seasoning, salt, and pepper
Layer zucchini-tomato mixture in a 9×13-inch baking dish
Top with chicken-cheese mixture
Sprinkle mozzarella cheese over chicken
Mix remaining cream cheese with Parmesan for topping
Spread cream cheese mixture on top
Bake 25-30 minutes until bubbly and golden

Notes

Use pre-cooked rotisserie chicken for fastest prep
Fresh basil makes a nice garnish
Add sliced mushrooms for extra flavor
Leftovers store well in the fridge up to 3 days
