Ingredients

Scale

4 Cod fillets (6 oz each)
2 tablespoons Olive oil
3 cloves Garlic, minced
2 tablespoons Lemon juice, freshly squeezed
1 teaspoon Dijon mustard
1/4 cup Parmesan cheese, finely grated
1/4 cup Panko breadcrumbs
2 tablespoons Fresh parsley, chopped
1/4 teaspoon Smoked paprika
Salt and black pepper to taste

Instructions

Preheat your oven to 400°F (200°C) and grease a baking dish.
Pat the cod fillets dry with paper towels and season with salt and pepper.
In a small bowl, whisk together olive oil, minced garlic, lemon juice, and Dijon mustard.
Place the cod in the baking dish and brush each fillet generously with the oil and garlic mixture.
In a separate small bowl, combine the panko breadcrumbs, Parmesan cheese, parsley, and smoked paprika.
Spoon the breadcrumb mixture over each fish fillet, pressing gently to ensure it adheres.
Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork and the crust is golden brown.
Serve immediately with a wedge of lemon if desired.

Notes

Ensure the cod is patted dry thoroughly to help the crust stick. You can substitute cod with haddock or pollock if preferred. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
