1.5 lbs Baby Yukon Gold or Red Potatoes (washed and cut into bite-sized pieces)
3 tbsp Olive Oil or Melted Butter (for coating)
1 cup Grated Parmesan Cheese
1 tsp Garlic Powder
1/2 tsp Onion Powder (optional)
1 tsp Italian Herbs (oregano, thyme, basil)
1/2 tsp Black Pepper (freshly ground)
3/4 tsp Salt
2 tbsp Fresh Parsley (chopped, for garnish, optional)
1/4 tsp Smoked Paprika (optional)

Instructions

Preheat oven to 425°F (220°C)
Combine potatoes, olive oil/butter, salt, pepper, garlic powder, onion powder, and Italian herbs in a bowl
Spread evenly on a baking sheet
Bake for 20 minutes, flipping once
Sprinkle Parmesan cheese and smoked paprika (if using) over potatoes
Return to oven and roast for 5 more minutes until golden and crisp
Garnish with chopped parsley before serving

Notes

Use any waxy potato if Baby Yukon Gold or Red Potatoes are unavailable
