1 tablespoon cooking oil
1 pound shrimp or prawns, peeled and deveined
2 tablespoons salted butter, divided
1 small yellow onion, diced
6 cloves garlic, finely diced
5 oz sun-dried tomato strips in oil, drained (reserve 1 teaspoon oil)
1 3/4 cups half and half or heavy cream
3 cups baby spinach leaves
2/3 cup parmesan cheese, freshly grated
1 teaspoon dried Italian herbs
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
Heat the cooking oil in a large skillet over medium-high heat.
Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side, then remove and set aside.
In the same skillet, melt 1 tablespoon of butter and sauté the diced onion until translucent.
Add the garlic and sauté for 1 minute until fragrant.
Stir in the sun-dried tomatoes and the reserved teaspoon of oil.
Reduce heat to medium-low, pour in the cream, and stir in the Italian herbs.
Bring to a gentle simmer, then stir in the parmesan cheese until the sauce thickens slightly.
Add the baby spinach and cook until wilted.
Return the shrimp to the pan and toss to coat with the sauce.
Season with salt and pepper to taste and garnish with fresh parsley before serving.
Use heavy cream for a thicker, richer sauce if preferred. You can substitute fresh basil for parsley for a different aromatic profile. Serve over pasta, zucchini noodles, or with a side of crusty bread to soak up the sauce.
