Ingredients

Scale

1 pound 90/10 ground beef
1/2 medium onion, finely chopped
2 tablespoons taco seasoning
2 tablespoons tomato paste
1/4 cup beef broth
Salt to taste
8 (6 inch) flour tortillas
2-3 cups shredded mozzarella cheese
2 tablespoons avocado or vegetable oil
Fresh cilantro for garnish

Instructions

In a large skillet over medium-high heat, cook the ground beef and onions until the beef is browned and onions are translucent.
Drain any excess grease from the pan.
Stir in the taco seasoning, tomato paste, and beef broth; simmer for 3-5 minutes until the liquid has reduced and the mixture is thick and flavorful.
Remove the beef mixture from the skillet and wipe the pan clean.
To assemble, place a small portion of the beef mixture and a generous amount of shredded mozzarella on one side of each flour tortilla.
Fold the tortillas in half.
Heat a thin layer of oil in the skillet over medium heat.
Working in batches, pan-fry the tacos for 2-3 minutes per side until the tortillas are golden brown and crispy and the cheese is fully melted.
Drain on paper towels and garnish with fresh cilantro before serving.

Notes

Use beef broth instead of water to enhance the savory profile. Ensure your skillet is not too hot to prevent burning the tortilla before the cheese melts. You can serve with extra salsa or a squeeze of lime juice for brightness.
