Cowboy Butter Lemon Bowtie Chicken with Broccoli

Cowboy butter lemon bowtie chicken is a rich pasta dish with juicy seared chicken, broccoli, and bowtie pasta tossed in a creamy garlic butter sauce.

Ingredients

Scale

1/2 cup unsalted butter

2 tbsp olive oil

4 cloves garlic minced

1 large shallot minced

1 tsp smoked paprika

1/2 tsp chili powder optional

1 tsp fresh thyme

1 1/2 lbs boneless skinless chicken breasts

Salt to taste

Black pepper to taste

12 oz bowtie pasta

2 cups broccoli florets

1/2 cup reserved pasta water

1 tbsp fresh parsley chopped

Lemon slices for garnish

Instructions

1. Bring a large pot of salted water to boil and cook bowtie pasta

2. Add broccoli during the last 3 to 4 minutes of pasta cooking

3. Reserve one cup pasta water then drain pasta and broccoli

4. Heat olive oil in skillet and sear chicken 3 to 4 minutes per side until cooked

5. Remove chicken and set aside

6. In the same skillet melt butter and sauté garlic and shallot

7. Add smoked paprika chili powder and thyme and cook until fragrant

8. Pour in half cup pasta water and simmer sauce

9. Slice cooked chicken

10. Add pasta broccoli and chicken back to skillet and toss with sauce

11. Adjust consistency with extra pasta water if needed

12. Garnish with parsley and lemon before serving

Notes

Pat chicken dry before searing for best browning

Use reserved pasta water to create a silky sauce

Add a squeeze of lemon for extra brightness
