Fluffy Cottage Cheese Pancakes made with simple ingredients and packed with protein. A quick and delicious breakfast perfect for busy mornings.

1 1/2 cups cottage cheese

4 eggs

1 tsp vanilla extract

2 tbsp sugar

1 tbsp baking powder

1 cup flour

1/4 cup canola oil for frying

Instructions

1. Combine cottage cheese, eggs, vanilla extract, sugar, baking powder and flour in a mixing bowl, mixing after each addition.

2. Preheat a skillet with canola oil over medium heat.

3. Scoop about 1/3 cup of batter for each pancake into the skillet.

4. Cook pancakes until golden brown on each side.

5. Serve hot with maple syrup, jam or fresh berries.

Notes

Use cottage cheese with small curds for the best texture.

You can blend the batter for smoother pancakes.

Use whole wheat, oat or all-purpose flour.
