8 large eggs

1 cup cottage cheese

1 1/4 cups shredded Colby Jack cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

Cooking spray

Instructions

1. Preheat oven to 325°F and spray muffin tin.

2. Whisk eggs until frothy.

3. Add salt, pepper, and garlic powder.

4. Fold in cottage cheese, Colby Jack, and bacon.

5. Divide mixture into 12 muffin cups.

6. Place water bath on lower rack.
