4 slices thick-cut bread (Brioche or Texas toast)
2 large eggs
1/2 cup milk (whole, 2%, almond, or dairy-free alternative)
1 teaspoon non-alcoholic vanilla flavoring
2 teaspoons ground cinnamon (1 for egg mixture + 1 for coating)
1/4 cup granulated sugar (for coating)
1/4 cup butter (salted or unsalted)
Extra cinnamon and sugar for coating

Instructions

Preheat a large skillet over medium heat.
In a bowl, whisk together eggs, milk, non-alcoholic vanilla flavoring, and 1 teaspoon ground cinnamon until smooth.
Melt half of the butter in the skillet until it’s foaming.
Dip each bread slice into the egg mixture, coating both sides evenly.
Cook each slice in the skillet for 2-3 minutes per side, until golden brown and crispy.
In a small bowl, mix the granulated sugar with the remaining 1 teaspoon cinnamon for coating.
Place the toasted slices on a wire rack and sprinkle the cinnamon-sugar mixture over both sides.
