Ingredients

Scale

4 bone-in chicken thighs (about 2 pounds)
¼ cup honey
2 tablespoons chipotle chili powder
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
2 pounds russet potatoes (peeled and cut into chunks)
1 cup milk
4 ounces smoked Gouda cheese (shredded)
4 tablespoons unsalted butter
Salt and pepper to taste (for seasoning mashed potatoes)

Instructions

Pat chicken thighs dry and season with salt, black pepper, chipotle chili powder, and garlic powder.
Drizzle olive oil and honey over thighs, gently rub to coat.
Heat 1 teaspoon oil in a skillet over medium-high heat; cook thighs 5-7 minutes per side until golden brown. Transfer to oven (375°F) to finish cooking for 12-15 minutes.
Boil water and simmer potatoes 12-15 minutes until tender; drain.
Add milk, butter, and smoked Gouda to potatoes; mash until smooth and creamy.
Season mashed potatoes with salt and pepper to taste.
Serve chicken thighs with mashed potatoes.

Notes

Marinate chicken in spice mixture for 30 minutes for deeper flavor.
Use any smoked cheese (cheddar or mozzarella) if Gouda is unavailable.
Let chicken rest 5 minutes before serving for juicier results.
