Chicken Torta is a classic Mexican sandwich made with seasoned shredded chicken, melted cheese, lettuce, tomato, and jalapeños on toasted bolillo bread.
4 bolillo rolls
1 rotisserie chicken shredded
1 small can green chiles
1 small can pickled jalapeños
1 large tomato diced
1 cup shredded pepper jack cheese
1 bunch cilantro chopped
1/2 white onion diced
1/2 head iceberg lettuce shredded
1/4 cup mayonnaise
Taco or fajita seasoning to taste
Avocado oil for the griddle
1. Shred the rotisserie chicken into bite sized pieces.
2. Heat a griddle with avocado oil and cook the chicken with green chiles and jalapeños.
3. Add taco seasoning and cook for about 5 minutes.
4. Add diced tomato and shredded cheese and mix until melted.
5. Spread mayonnaise on bolillo rolls and toast on the griddle.
6. Place the chicken mixture on the bread and top with lettuce, cilantro, and onion.
7. Close the sandwich, slice in half, and serve.
You can substitute beef, pork, or grilled vegetables for the chicken.
