1 1/2 lbs boneless, skinless chicken breasts (or thighs), thinly sliced
1 tablespoon Worcestershire sauce (check for alcohol-free variety)
2 teaspoons olive oil, divided
1 tablespoon unsalted butter
1 large yellow onion, thinly sliced
2 bell peppers (green and red), thinly sliced
2 garlic cloves, minced
1 teaspoon Italian seasoning
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
68 slices provolone or white American cheese
4 hoagie rolls, split
Optional spreads: garlic-herb mayo, Dijon mustard, or butter

Instructions

In a bowl, mix chicken with Worcestershire sauce and let marinate for 15 minutes.
Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add onion and peppers; sauté 5-7 minutes until softened.
Add remaining 1 teaspoon olive oil and melted butter to the skillet. Cook chicken 5-7 minutes per side until browned and cooked through.
Stir in garlic, Italian seasoning, salt, and pepper; simmer 2-3 minutes until sauce thickens slightly.
Assemble sandwiches by layering chicken mixture, onions/peppers, and cheese slices onto hoagie rolls. Add optional spreads if desired. Serve warm or toasted.
