Chicken Barley Soup is the ultimate comfort food for chilly evenings when you want something nourishing and simple to prepare. This wholesome meal combines tender chicken, fresh vegetables, and chewy, nutty pearl barley in a flavorful, clear broth. It is a hearty, family-friendly dinner that feels like a big hug in a bowl, perfect for a warming weeknight meal with minimal cleanup.
1 teaspoon olive oil
1 cup chopped carrots
1 cup chopped onions
1/2 cup chopped celery
2 cloves garlic, chopped
1–1/2 lbs skinless bone-in chicken breast
7 cups reduced sodium chicken broth
1/4 cup chopped fresh parsley
2 bay leaves
2/3 cup dry pearl barley
Fresh ground black pepper, to taste
Heat a large heavy pot or Dutch oven over medium heat. Add the olive oil, carrots, onion, celery, and garlic. Stir frequently until the vegetables begin to soften and release their fragrance.
Add the bone-in chicken breast, chicken broth, parsley, and bay leaves to the pot. Increase the heat slightly to bring the mixture to a boil. Once boiling, reduce the heat to low and cover with a lid. Simmer for about 30 minutes until the chicken and vegetables are fully tender.
Carefully remove the chicken from the pot. Shred or cut the meat into bite-sized pieces and discard the bones. Return the chicken to the pot, stir in the pearl barley, and season with fresh black pepper. Continue to simmer for an additional 30 minutes or until the barley is cooked through and tender. Remove and discard the bay leaves before serving.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Use chicken thighs for a more succulent meat texture. Feel free to stir in a handful of fresh spinach or kale during the final 2 minutes of cooking for added nutrients. Farro can be used as a substitute for barley.
