1 yellow onion, finely diced
4 pounds russet potatoes, peeled and sliced into 1/4-inch pieces
2 cups grated cheddar cheese
1 can (10.75 ounce) condensed cheddar soup
1 can (12 ounce) evaporated milk
1/2 cup milk
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper to taste

Instructions

Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onion is translucent; drain any excess grease.
In a medium bowl, whisk together the condensed cheddar soup, evaporated milk, milk, garlic powder, salt, and pepper until smooth.
Arrange half of the potato slices in the bottom of the prepared baking dish.
Spread the cooked beef and onion mixture evenly over the potatoes.
