Ingredients

2 large sweet onions, peeled, halved, and thinly sliced
8 tablespoons unsalted butter, divided
1/3 cup mayonnaise
2 tablespoons ketchup
1/2 teaspoon yellow mustard
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper

8 slices thick cut sourdough or rye bread
4 slices medium cheddar cheese
4 slices swiss cheese

Instructions

Preheat cast iron skillet over medium-high heat until hot
Add 4 tablespoons butter and sauté onions until caramelized and golden brown, about 10-12 minutes
Reduce heat to medium and add remaining 4 tablespoons butter
Form sirloin steak patties into 1/2-inch thickness
Sear patties in the skillet for 3-4 minutes per side or until desired doneness
Butter both sides of bread slices in the skillet for 2-3 minutes until toasted
Place cheese slices on one side of bread, then top with cooked patties and caramelized onions
Cover and melt cheese for 2-3 minutes
Spread mayonnaise, ketchup, mustard, garlic powder, and pepper mixture on the other bread slices
Stack completed sandwiches and serve immediately

Notes

Use halal beef sirloin or substitute with 100% grass-fed ground beef
For a vegetarian version, replace steak with grilled portobello mushrooms
Adjust cheese type or thickness to preference
