1/2 cup fresh lime juice
1/4 cup fresh orange juice
1/4 cup olive oil
1/4 cup soy sauce
4 garlic cloves, minced
1 chipotle pepper in adobo, chopped
1 tbsp brown sugar
1 tsp ground cumin
1 tsp chili powder
1 tsp smoked paprika
1 tsp dried oregano
1/2 tsp black pepper
1/4 tsp salt
Optional: 1/4 cup chopped fresh cilantro
1. Whisk together all marinade ingredients in a bowl until well combined.
2. Place flank or skirt steak in a zip-top bag or shallow dish and pour marinade over it. Reserve 1/4 cup.
3. Seal and refrigerate for at least 4 hours, ideally overnight.
4. Preheat grill to high heat. Remove steak from marinade and grill 4–6 minutes per side.
5. Brush with reserved marinade and let rest 5–10 minutes.
6. Slice thinly against the grain and serve.
Marinate up to 24 hours for maximum flavor.
