Perfect for chilly evenings, this nutritious and filling dinner melds all the rustic, satisfying flavors of traditional cabbage rolls into one easy-to-make, family-friendly soup.

Ingredients

Scale

2 tsp. vegetable oil
1 lb. lean ground beef
Salt and pepper, to taste
1 medium yellow onion, diced finely
2 cloves garlic, minced
4 cups chopped green cabbage
2 medium carrots, quartered and sliced
4 cups low-sodium beef broth
24 oz. tomato sauce (3 cans, 8 oz. each)
1/2 cup white rice, uncooked
1 bay leaf
3 tbsp. light brown sugar
2 tbsp. fresh chopped parsley

Instructions

Step 1: Brown the Beef

In a large dutch oven or soup pot, heat the vegetable oil over medium-high heat. Add the lean ground beef and season with salt and pepper to your preference. Cook the meat thoroughly until it is nicely browned, making sure to break it up with a wooden spoon as it cooks.

Step 2: Sauté Aromatics

Once the beef is browned, add the finely diced yellow onion and minced garlic to the pot. Sauté these aromatics for 2-3 minutes or until the onions turn translucent and fragrant, which builds the flavor foundation for your Cabbage Roll Soup.

Step 3: Combine Ingredients

Add the chopped green cabbage, sliced carrots, tomato sauce, beef broth, uncooked white rice, bay leaf, and light brown sugar to the pot. Stir everything well until the ingredients are fully incorporated into the broth.

Step 4: Simmer and Serve

Bring the mixture to a gentle simmer. Reduce the heat and cook for about 25 minutes, or until the rice is perfectly tender and the vegetables are soft. Remove the bay leaf before serving, and garnish each bowl with a sprinkle of fresh chopped parsley.

Pro Tips

  • Chop the cabbage into uniform pieces so it cooks evenly with the carrots.
  • Let the soup sit for 5 minutes after cooking to allow the broth to thicken slightly.
  • For extra flavor, use a splash of Worcestershire sauce to enhance the beef notes.
  • If you are meal prepping, cook the rice separately and add it to individual bowls to keep the grains firm.

Notes

You can substitute ground beef with ground turkey or chicken for a leaner alternative. Store leftovers in an airtight container in the refrigerator for up to 3 days; the rice may absorb more broth as it sits, so add a splash of water when reheating.
